Abstract

The article is a bibliographical survey on La scienza in cucina e l’arte di mangiar bene (i.e. Science in the kitchen and the art of eating well), one of the most famous recipe-books in the world. First published in 1891, it had a great number of reprints and several translations. La scienza in cucina – the author says – is considered not only an interesting and useful guide to Italian cuisine (Artusi collected over 700 recipes from all over the Country), but also a classic of Italian literature.
